Students in Emporia State University’s athletic training program both benefited from Wednesday’s John Baxter Scholarship Fund taco feed and did a lot of the work for the event.
Among the students helping out was junior Amber Krehbiel of Pretty Prairie. She is looking forward to a career in physical therapy after college and says she helped out Wednesday for several reasons.
Sophomore Katie Parks of Wichita says the scholarship has helped her get started as she prepares for a career as a trainer.
Proceeds from the event go into the scholarship named after Baxter, who was Emporia State’s head athletic trainer and instructor from 1966 to his retirement in 2012 and also served as the university’s director of athletic medicine before he died in 2016. A portion of the proceeds also go towards student learning and leadership opportunities like trips to statewide, regional or national conferences.
The event generated about $1,500. Around 1,400 tacos were made.
