The Lyon County Fairgrounds Anderson Building was hopping inside and out Saturday morning as hungry residents pulled through to enjoy a delicious pancake meal prepared by Emporia’s Christian School.
ECS PTO President Marcy Shirk says they were excited to have the pancake feedback on the menu after having to postpone the event in November due to a surge in COVID cases. Shirk says having the event in the springtime is symbolic in a way as it is a time of new beginning and also a time where residents are beginning to be more active.
Saturday’s breakfast is the school’s largest fundraiser each year benefiting the ECS PTO. Being a private school, ECS does not receive funding from either government or outside sources like the majority of public schools, making events like Saturday a necessity to maintain the school’s facilities.
Shirk says in addition to being a fundraiser, the pancake feed is also an important community service event.
