Emporia State University had a pair of events on campus Sunday.
Activities started with the annual Spring Migration Triathlon, which included a 400-meter swim at the ESU indoor lap pool, a 20-K bike ride starting north out of Emporia and a 5-K run taking participants initially just west of campus. Emporian Sam Tovar was participating for the first time in six years, due to a prior injury and the COVID-19 pandemic. He was glad for a chance to be part of the triathlon.
Seventy people participated. Kevin Nickel won the men’s event in just under 50 minutes. Lynsey Fugate won the women’s event in 1 hour, 2 minutes, 29 seconds.
From there, people could take part in the International Food Fest at the Memorial Union Webb Hall, with numerous cultures and cuisines represented. At the Nigerian table, Aderonke Olukotun described jollof rice — her group’s main offering — as the food item you simply can’t go without when she’s back home.
Emporia State currently has around 200 international students enrolled. Nearly 20 countries were represented at the event. The event raises money for scholarships and totals are pending.
