A new collaborative effort helping combat food insecurity locally held its very first public event in the Emporia State University Memorial Union Wednesday.
Emporia At the Table: Ending Hunger in Our Community was founded this fall by Dr. Jasmine Linabary, Dr. Rebecca Rodriguez Carey, and Blythe Eddy to fight food insecurity within the ESU campus and local community.
Wednesday’s event featured a speech from Kanbe’s Markets Founder Max Kaniger on how he is using his organization to combat food insecurities in the Kansas City area by supporting locally-owned convenience stores within insecure areas.
While there are a variety of factors which cause food insecurities the main cause started, according to Kaniger, when the food market first began.
EAT will be hosting another featured speaker, Dr. Don Willis, on Oct. 18 where he’ll share his research on food insecurity among college students.
