If you have food, they will come.
That was the basic premise of Flinthills Mall’s spring Food Truck Rally – and the premise held true as hundreds of residents lined up for a wide variety of food options. Mall marketing manager Heather Siebert says this was exactly what she and mall manager Clarence Frye had in mind.
The mall’s spring edition brought some now-traditional vendors to the event, including Karl Baker of Lazy Butt BBQ.
New to the event, although not new to Emporia, was Poppin Squeeze of Topeka. Co-owner Aaron Parrish says it’s good for residents and vendors alike. It also helps to expand the business’s reach.
Nearly 10 vendors were on hand, with food ranging from snacks to barbecue to Mexican to pizza. Siebert says there are trucks already signed up for the mall’s food truck event this fall.
